Terroir:  Boursault, “vallée de la marne river Gauche”.

Multi terroir : clays on limestone , clays on sands , clays on marnes, profond clays.

Harvest: Manual grape picking with sorting. Harvest Optimal maturity, no chaptalisation when the vintage allows it.

Dosage:  2,2 g/L - Brut Natur

Winemaking: This Champagne is made by traditional method. Indigenous yeasts, not interventionist vinification

Aged on the lees during 9 months without racking. Light batonnage on wines in barrels. Particlar attention put into the aging of “tailles” must

Malolactic fermentation unwanted. No filtration, no cold stabilisation. 

Bottling day 21 July 2022 according to the lunar cycles. Disgorgment 15 November 2023 according to the lunar cycles. 

Tasting note: Delicate, fresh and fruity, ideal for aperitifs. Seafood and fish.

Should be served in an ice bucket at a temperature of 5-7°.
