Blend: 100% Chenin (Chenin Blanc)

Zero dosage: BRUT NATURE

Winemaking: barrel aging, barrel fermentation, whole-cluster direct pressing, dry farming, grapes from our own vineyards, hand-harvested, bottle fermentation of natural sparkling wine.

Ageing: 6 months in oak French barrels (one third of them is new)

Tasting Notes: The Chenin vineyards that produce the grapes for this bright, crystal-clear sparkling wine are located on the finest chalky plots of Asteris in the Entre-de-Mer wine region. The Dupuch vineyards form islands of biodiversity in a region that historically has not been known for this. The results are stunning.

Despite the lack of AOC status, the Chenin variety thrives in these chalky vineyards, producing a wine with a pale golden hue, fine, delicate bubbles, and a sparkling texture. Lively fruity aromas of citrus, quince, and stone fruits entice even before this lively, high-toned wine touches the palate. Light yet balanced with a long finish, it is an impressive creation.
